Disc-It: Turkey Lettuce Wraps

A new season of the Disc-It Cooking Show is underway and your’s truly has contributed a couple of recipes.  The St. Patrick’s Day Episode features my uniquely delicious Green Chile Rub and of course the coolest cooker ever, the Disc-It!!  As part of my gravity reduction plan I thought it would be fun to come up with a recipe that was healthy and had tons of flavor and boy does this one deliver.  Check it out!!

Here’s the recipe for the Turkey Lettuce Wraps. Turkey Lettuce Wraps
1lb of lean ground turkey breast
2 cups of cooked rice, white or brown
1 cup of shredded carrots
1 cup of chopped scallions
2-3 jalapeño peppers chopped
2 tablespoons of rice wine vinegar
2 tablespoons of low sodium soy sauce
1 head of butter or iceberg lettuce
1 can cooking spray oil
2 tablespoons of AlbuKirky Green Chile Rub

Chow mein noodles

Sriracha Sauce


Peanut Sauce
2 tablespoons of crunch peanutbutter
1/3 cup of lite coconut milk
dash of cayenne pepper to taste

Heat up the disc and coat the with cooking oil spray, add the turkey and start to brown.  When the the turkey is about 3/4 done add the carrots, onions and jalapeño and cook for 2-3 minutes. Also add the vinegar, soy sauce and Green Chile Rub.  Now stir in the rice until completely mixed, add any additional seasoning to taste.
Sauce 
Add the coconut milk and peanut butter to the disc and warm and stir until the peanut butter is melted.Season with cayenne pepper to taste.
Start with a leaf of lettuce and fill with the turkey, top with peanut sauce, a squirt of  sriracha sauce, top with chow mein noodles, wrap and enjoy!

  1. Great sounding recipe, Kirk. I especially like the coconut milk and peanut butter sauce. Saving the recipe to try.

    I have to get me one of those Disc-Its. Larry has a discadia and loves it.
