Pumpkin Crunchin

I hope you all had a happy Thanksgiving, and my now that my little break is over its time to get back to business.  You know, sometimes I’m so obsessed with cooking meat that I overlook the little things, like pumpkin seeds.  I recently received an email from fan/customer Erika Blankenship, apparently she had a plethora of pumpkin seeds and decided to spice them up with some AlbuKirky BBQ Rub.  I have to admit it was a great idea and don’t know why I didn’t think of it myself.

AlbuKirky Pumpkin Seeds

AlbuKirky Pumpkin Seeds
2  Cups of Raw Pumpkin Seeds
2  Tablespoons of Butter
1  Tablespoon of AlbuKirky BBQ Rub

3 Ingredients, Tons of Flavor!

Start by melting the butter, then in a large bowl stir the BBQ rub into the melted butter.  Then add the pumpkin seeds, stir until the seeds are well coated with the butter rub mix.  Spread the seeds out evenly on a large cookie sheet.  Clean up is easier if you use a piece of parchment paper but it’s no required.  Bake in a 350º oven for 20-25 minutes. (Yes, I baked them in an oven)
