Disc-It Video: Pecan Crusted Chicken Nuggets

Last year I created the Pecan Crusted Chicken Nugget and it has since become one of my signature dishes.  It’s chicken with BBQ sauce and it’s fried, what’s not to love about that? They were a HUGE hit at the Disc-It Round Up last year, I ran out of chicken twice!  Since it has become one of my favorite recipes I just had to cook it for the current season of the Disc-It Cooking Show.  Sorry I’m a week late in getting the video up and the giveaway is over,  but if you decide to buy a Disc-It just call Nevin and tell him your a friend of AlbuKirky and I’ll throw in a free bottle of rub. Pecan Crusted Chicken Nuggets with a Drizzle of Honey
Pecan Crusted Chicken Nuggets   (click for printable recipe)
2lbs of Boneless Chicken Breasts cut into 1 ounce pieces
½ cup of Panko Bread Crumbs
½ cup of Plain Bread Crumbs
½ cup of Pecans Chopped
4 Eggs Beaten or 1 cup of Egg Substitute
3 teaspoons AlbuKirky Seasonings BBQ Rub
Mix the bread crumbs, pecans and BBQ Rub in a large bowl. In another large bowl add the eggs and beat thoroughly. Dredge chicken pieces in egg then roll in the breadcrumb and nut mixture, coat completely.  Heat the cooking oil in Disc-It or deep frying pan to 350-375F.  Add 5-10 pieces of chicken to the hot oil and fry for 2-3 minutes or to an internal temperature of 160F.  Allow the nuggets to cool for a few minutes and serve with AlbuKirky Seasonings BBQ Sauce. Also very tasty drizzled with honey

  1. Those look pretty awesome! Except for the fact there are pecans in there and I'm allergic to them. But DANG they look good.

  2. Chris, you can omit the pecans as long as you use AlbuKirky Rub & Sauce.
    Brian, the pecan don't get any harder, just crispier like a toasted nut.
