Grilled Chicken Kabobs with Bacon Rub

The AlbuKirky R&D has been working hard scouring the culinary world to bring our loyal readers new and exciting recipes and techniques.  This week we’ve got a really good one for you.  Wait for it….wait for it….BACON RUB! Not a bacon flavored dry rub, I’m talking about a rub made from real fresh bacon.  It’s so easy, all you need is bacon, a food processor and meat that need baconizing.

Actually, I do need to give credit where credit it due, don’t want people to think I’m a recipe poacher.  Cheryl saw this little trick on the Today show a couple weeks ago when Christopher Kimball did a segment on kabobs.  This was such a great trick I had to try it and share it with you, my loyal followers.
To make bacon rub you’re going to need a food processor and some slices of bacon.

Now, turn on the processor until the bacon is thoroughly blended and forms a paste.

To use the porky paste I cut up some chicken breasts into 1” chunks and season them with BBQ rub.  Then I added a couple of heaping spoons of the bacon rub and worked it into the meat.  The paste has a texture similar to a thick butter so it takes a little work and massaging to coat the chicken nuggets.

With the chicken all seasoned up I threaded the meat onto skewers.  I like to use a double skewer for the kebobs, as it keeps the meat from rolling around and it’s easier to flip.  Don’t forget, if you are using wood skewers, soak them in water for thirty minutes prior to grilling.

 I cooked the kebobs on the BGE at 450F for 4 minutes on each side, about 8-10 minutes total.  If you are using dark meat cooking time is 10-12 minutes.  Just be sure to cook the chicken to an internal temperature of 160F.

As usual, I took my first taste while still at the grill.  I pulled the chunk of chicken off the skewer, blew on it a little then popped it into my mouth.  It tasted like chicken…with a ton of BACON FLAVOR!  The amount of bacon flavor packed into one little bitty piece of chicken was truly amazing. I was really impressed with the layers of flavor of the kabob, the sweet chicken, the spicy rub and the smoky flavor of the bacon and charcoal really made this a truly memorable meal.  I can’t wait to cook this up again for one of our famous dinner parties.

  1. I cooked these on the GrillGrates and the drippings hit the grate and created a really nice bacon smoke, combined with the charcoal smoke it was amazing.
