Getting over the Hump

I’ve got spring fever. In my younger days springtime meant a week of drunken debauchery, but these days I’m happier just grilling some good grub and eating on my patio. So tonight I washed off the patio and fired up the Weber grill for a little mid-week relaxation.

Grilled Chicken Caesar Salad

For tonight’s dinner we whipped up a double grilled Caesar Salad. The double grilling comes from grilling the romaine lettuce and the chicken. I had seen the grilled romaine lettuce trick on some cooking shows and thought tonight would be a great time to try it.

Grilling Chicken and Romaine Lettuce on Weber Genesis

To grill the lettuce, start with head of romaine lettuce and cut in ½ lengthwise. Brush the flat side with some oil and season with a little salt and pepper. Then grill the lettuce for about 2-3 minutes, just long enough to caramelize the sugars and warm the lettuce.

We served the grilled lettuce over a bed of raw romaine lettuce which made for a nice contrast of flavors and textures. Topped with a grilled chicken breast and homemade Caesar Dressing. Cheryl uses Wolfgang Puck’s recipe for Caesar dressing and it is absolutely amazing.

A nice dinner on the patio is just what the doctor ordered to cure my spring fever, well not cure but just enough to get me to the weekend. And I’ve got a lot of grilling planned this weekend. So stay tuned and see what I cook up. Chow for now.
