Like Tootsie Pops but Meatier.


This week I’m cooking up one of my favorites, lamb meat pops.  I know a meat pop sounds funny but there is some serious flavor going on here.  And don’t be decieved by their size there is a lot of meaty goodness going on here.  If you’re not a fan of lamb, you will be after you try this dish.

Rack of Lamb Meat Pops with Jalapeno Mint Sauce

Lamb Meat Pops Ingredients
1 – Rack of Lamb
2 – Jalapenos chopped
2 – Tablespoons of Mint flavored Apple Jelly
2 – Tablespoon of AlbuKirky BBQ Rub
3-4 Mint Leaves Chopped

If you want a little less spice remove the seeds and pith from the jalapenos.  Be sure to wear gloves when handling the jalapenos, you will be sorry if you don’t.

Start by slicing the rack of lamb between the bones and make little meat chops.  

Then trim off the fat from the back part of the chop.  Coat the chops with oil, vegetable, canola or peanut.  Then season the coated chops.  If you don’t have any BBQ Rub, salt, pepper and garlic will be fine.

I used the Disc-It to cook these delicious little meat morsels.  The Disc-it works like a flat top cast iron skillet that puts a great crusty sear on the chops.  The best part is the drippings from the meat collect in the bottom, which then becomes part of the sauce.  Lamb is best rare to med-rare, so I seared the meat for 2 ½ to 3 minutes on each side, depending on the thickness of the chop.  If you don’t have a Disc-it, you can use a cast iron skillet on the heat source of your choice.

After I removed the chops from the disc I added the chopped jalapeno to the disc and sautéed them for a minute then added the apple mint jelly until the jelly melted with the drippings to make the sauce. When the sauce is done add some of the fresh chopped mint to kick up the minty-ness. To serve, plate the chops and drizzle the jalapeno mint sauce over the chops and garnish with some of the fresh mint. The spicy sweet and minty flavor of the sauce really compliments the flavor of the lamb. 


I actually made this dish two weeks ago but all of my cooking pics were blurry and I had to make the dish again for a reshoot.  These are the kind of sacrifices I make for you, my loyal followers. So get yourself some lamb, jalapenos and mint jelly and make yourself some meat pops, you won’t regret it.

I’m sure my dad started read this post and stopped at lamb and is making plans to excommunicate me from the family.  My dad retired from the concrete business about 16 years ago and started living out his cowboy dream.  He now owns a ranch with 50-60 head of cattle.  I once asked him if he was going to see Brokeback Mountain because he’s a big fan of Larry McMurty.  He said no, not because the characters were gay but because they were sheep farmers.  So I’m sure my fate now sealed, but at least I’m living out my dream too, even it does include eating sheep.  Love ya Dad!
