Cook Once Eat Twice, Maybe Thrice.

The best thing about grilling big hunks of meat is the left overs.  Brisket makes some really good leftover meals.  Tonight I fired up the disc and made one of my left over favorites brisket tacos. 

I started with some chopped up brisket, 1/4 of an onion, chopped, 2 cloves of garlic chopped and a lime wedge.

What really makes these tacos good is to get the meat all crispy, so for this I’m using my Disc-it.  The Disc-it is a cross between a flat top griddle and a wok, it gets really hot and does a great job crisping up this meat.  You can get the same results with saute pan on the stove top, I just like showing off my toys.

 Heating up some white corn tortillas around the outside of the disc.

For the taco I doubled up the tortilla, because they tear really easy when filled.  The brisket is all nice and crispy, kind of like a burnt end.

  Topped with cheese, chipotle sauce, shredded cabbage and squeeze of lime juice.

So that was tonight’s dinner.  I’ve still got enough brisket for one more meal.  I’ll keep you all posted on what I come up with next.
