This is Other Stuff.

 As promised I mixed up the turkey sausage last night and cooked it this morning.  It was actually very good, but I did go a bit overboard with the spices.  It was a bit peppery and Cheryl thought it too salty.  Although it tasted fine once I scrambled in the eggs.  So here’s the revised recipe, I cut the salt and pepper back to two teaspoons.  Overall I was quite pleased with the results.  What’s not to love about a delicious egg and sausage burrito?

 Green Chile Turkey Sausage
1 pound of ground turkey, 93% Lean
3 heaping tablespoons of chopped green chile.
2 teaspoons of kosher salt
2 teaspoons of garlic powder
2 teaspoons of black pepper
1 teaspoon of white pepper
1 teaspoon of sage
1 teaspoon of green chile powder

Mix all ingredients and let it sit overnight in the fridge.

I took this picture last night.  Looks pretty spicy, huh?

 Browning the sausage in a hot pan with a little bit of peanut oil. The meat was really lean and it need a little oil to get the meat to brown.

Scrambled in some eggs for the burrito.  My favorite thing about egg burritos, is it’s a one dish kinda meal.

 

Heat up a nice tortilla and add some manchego cheese.

Well the week is off to a good start, I cooked something and got a blog post up.  Later this week I am going to tackle grilling some elk meat. I’ll probably start off with a burger, because it’s really hard to screw up a burger and it’s a good way to get a real flavor for the meat.  I’m also excited to try my spice mix on a some game meat.
